Is there a book that covers how to run your bunt defenses, 1st and 3rd defenses, cuts and relays and things like that?

For best practice I have used these attached charts, I believe they were the "ASA Standard". You might quibble with a few details, but I haven't found anything better (and I have looked long and far).

This is a great chart. Based off a book you can still buy called the Baseball Playbook. I recommend that book to all new softball coaches as most of the material still applies to softball, though some has to be adjusted due to the field being so much smaller.
