2 things:
1. Can't jump over the catcher, by rule. Unless the catcher is laying prone on the ground.
2. The catchers only responsibility is to tag the runner, not move and try a swipe tag, etc
#1 is interesting. I'll need to renew my NFHS membership as it expired end of June, so I can't see the rules. Found a reference from 2010 this is the rule in HS softball, but it is still legal in USA softball from the 2022 rules.

When you say 'jump' are you thinking jump as in hurdling the fielder, feet (and cleats) first or jump as in diving over the fielder?

NFHS Softball (2020), USSSA (2022); exact same verbiage from both:

NOTE: Jumping, hurdling and leaping are all legal attempts to avoid a fielder only if the fielder is lying on the ground.

Legal in NCAA (2022-2023):
12.13.4 To prevent a deliberate collision ruling, the runner can slide, jump over the top of the defender holding the ball, go around the defender or return to the previous base touched.
