EP explaination of the rules please !!

We play in a somewhat loose coed league(7 guys 3 girls), usually about 4-6 teams in it every year. League is not officially committed or governed by any specific organization rules. Anyways, we will have 11 people at our next game, how do we use the EP ? What we want to do is just have one person sit an inning each to make it fair for all of us. I understand you are not allowed to alter the batting order. Is there any way to work that? I'm not completely grasping the rules on the subject. Can we put 11 in the batting order and one sit every inning and the sitting player be skipped on the batting order ? or does it mean two players are going to have to sit half the game switching back and forth or halfway through the game since it says "NOTE: The original player and his/her substitute cannot be in the game at the same time."

SECTION 2 EXTRA PLAYER (EP)
a) Any team may use one (1) or two (2) Extra Players (EP) per game provided it is made known prior to the start of the game and properly indicated in the lineup.
b) The EP must remain in the same position in the batting order for the entire game.
c) The EP may play defense at any time without his/her status being affected. He/she may go in and out of the defensive lineup as often as needed as long as his/her position in the official batting order is not altered.
d) The EP may be substituted for at any time with the substitute becoming the new EP. The substitute must be a player who has not been in the game.
NOTE: See Rule 4, Section 4, for removal of the EP from the game. SECTION 3
Any of the starting players may be withdrawn from the game and re-entered once (including the starting EP), provided that the players occupy the original position in the batting order whenever in the game.
NOTE: The original player and his/her substitute cannot be in the game at the same time.

Bat all 11 players. You can still rotate who sits out on defense. Defensive positions can be switched at will. (ASA- Only exception would be if a player was removed as pitcher for an excessive speed violation after a warning) Everyone bats every time their spot comes up.

Standard slow pitch is 10 players, this rule allows you to bat 1 or 2 additional players so you can have up to 12 in the batting order, but only 10 play defense. Any 10 of those 12 can be on defense without restriction. You can rotate any of those 12 players in and out of the defensive lineup any time you want, you just cant change the batting order. And as the rule states, you have to make it known on the lineup prior to the start of the game.

I assume this is slow pitch, so you might have a better luck on a slow pitch message board. Coed softball usually has rules on the minimum number of women allowed and some regulate where they play in the field and how the batting order is set up. I have also seen leagues where if a team walks a man if the next batter is female, she walks too.
