Runners on first and second. Hit ball hits the rubber bouncing into left field. Base umpire screams dead ball and puts the hitter at first and the other runners at third and second. What would the rule be that he applied?

Unless there is a special ground rule because the rubber is somehow jacked up...got that one way wrong

If a ball hit the rubber and bounced into foul territory in the infield it would be a foul ball, but never heard that one
(assuming it was a line drive into the rubber and did not touch the ground in fair territory)

ETA: The pitcher's plate is part of the field. Judge a batted ball according to the fair/foul rules.

They were literally the worst crew I have ever seen. In that same game the plate umpire overruled the field ump on a play at second ruling her out for the last out. But, she still counted the run that crossed the plate a good 15 seconds after the play was over. In our game one of our players struck out three times in the same at bat. My DD walked on ball 5, because she count the pitch before a pick play. She would wait forever after a pitch before making a call. If someone said good pitch it would likely be called a strike. The only good thing is they were consistently awful all day. Btw this was for 18A bracket play.
